Who doesn’t love a good cookie? These kelp energy rounds are great hiking snacks and served as the celebratory Birthday Cookies for Zen and Vitality’s 4th birthday.

Kelp Energy Rounds

Servings: 24 Rounds

Ingredients

  • 2 cups ground up mixed seeds and nuts choose at least 2: pumpkin, flax, sesame, almond, hazelnut, walnut
  • 2 Tbsp kelp, granulated yes this is a seaweed
  • 1/4 tsp sea salt Real Salt from an ancient seabed in Utah
  • 1/2 cup maple syrup dark, rich flavored is best

Instructions

  • Grind seeds and nuts into powder – total of 2 cups when finished
  • Mix everything together
  • Spoon into 24 even splotches on cookie sheet (I use stoneware to prevent burning)
  • Using wet fingers, shape into a round, flat disk
  • Optional: Sprinkle with a few cacao nibs for extra celebratory fun
  • Bake in 350 degree oven for about 20 min (maybe less if using a metal cookie sheet)

Notes

I use locally grown maple syrup from S&S Maple Camp in Corriganville, MD.
For Zen and Vitality’s 4th Birthday Cookies, I used a combination of flax seeds, pumpkin seeds, raw almonds, and walnuts (that had been roasted with a bit of cinnamon and salt).
I have also liked a blend of almonds, hazelnuts, and pumpkin seeds.
