AKA: Maia’s Magic Muffs

I created these muffins for my daughter when she was healing from an injury and and chronic illness. On purpose, I turned a plain grain-free muffin into healing magic. I hope it works for you too!

Adaptogenic Grain-Free Banana Chocolate Muffins

Ingredients

The Basics

  • 3 Bananas, frozen then defrosted work well
  • 3 Eggs (ask your local day range hens is they have any available)
  • 1/2 cup Almond butter, organic
  • 1/4 cup Blackstrap Molasses
  • 1 tsp Vanilla Extract (make your own!)
  • 1/4 cup Coconut Flour
  • 1/2 tsp Baking Soda
  • 1/2 tsp Baking Powder
  • 1 pinch Sea Salt
  • 1/2 cup Dark Chocolate Chips, fair trade and organic

Optional

  • 1 tsp Cinnamon
  • 1/4-1/2 cup Whole Rolled Oats

The Magic

  • 1 tsp Ashwagandha powder for stress resilience
  • 1 tsp Mucuna powder for better dopamine production
  • 1 tsp Spirit Dust from Moon Juice – mood adaptogens

Instructions

  • Pre-heat oven to 350ºF
  • Mash bananas in mixing bowl
  • Add eggs and other liquid ingredients and stir until mixed
  • Add dry ingredients and stir until mixed
  • Add in the mix-ins and optional oats and stir
  • Scoop into silicone muffin pan or greased muffin pan (the little papers do not work very well with this recipe)
  • Cook in oven for about 25 minutes until dry in the middle
  • Wait longer than you would with a flour-based muffin to remove from the pan for added cooling. Otherwise you are likely to have a big collection of muffin crumbs.

Notes

Notes: These are quite filling and rich in protein and fat. They are also a good iron source. Pair them with a plate of veges and vitamin C rich fruits.
